Mixed Berry Tart Recipe

One of my favorite desserts during the Spring and Summer months is a mixed berry tart with streusel topping. It is also a dessert that my daughter’s best friend’s mom will always ask for her birthday present.

Incase that doesn’t tell you it is a delicious dessert, my husband must have his mixed berry tart almost every single day, during the warmer months and he is very picky when it comes to desserts so that proves is a winner.

The great thing about this dessert is that anyone can make it. So of you are new when it comes to baking desserts, then I will strongly suggest you start with a simple and easy dessert like this mixed berry tart with streusel topping. With the help of my 8 years old daughter, let’s make this easy dessert.

Mixed berry tart with streusel recipe

Ingredient:

1 Cup (125 g) blackberry

1 Cup (125 g) blueberry

1 Cup (125 g) raspberry

1 Cup (125 g) strawberry

¼ Cup granulated white sugar

1 teaspoon Vanilla extract

Pinch of salt

Shortbread Crust

For the  Streusel Topping:

1 Cup (125 g) All purpose flour

2 Tablespoons melted butter

¼ Cup brown sugar

Procedure:

Pre–heat Oven to 180°c/ 356°f

With the Shortbread Crust pre–baked, set aside.  Click here for a full recipe on how to make Shortbread Crust.

Wash the berries in a sieve and set on a kitchen towel to dry. In a medium size bowl, combine the flour, melted butter, sugar (use white or brown sugar here, it doesn’t really matter) and pinch of salt. Using finger tips, mix well until it resemble crumbs.

In another bowl, combine the berries, sugar, vanilla extract and add a bit of the streusel mix, to help thicken the liquid while baking. Using a spatula or a wooden spoon, toss well and pour it in your shortbread crust.

Spread evenly and top it with the streusel, use as much or as little as you prefer. Bake between 35—45 minutes or until berries begin to bubble around the sides and the streusel topping turns golden brown.

When done, let berry tart cool for about 20 minutes and serve with a dollop of vanilla Ice cream or simply enjoy it with a cup of tea or coffee .
