Healthy Eggplant Stew Recipe (simple and delicious )

Delicious Eggplant Stew Recipe 

You may call it Aubergine, Guinea Squash, Garden egg or as I call it Eggplant. It has an egg–like shape and a vibrant purple color with a unique range of health benefits.

Some of the benefits include the ability to help build strong bones and prevent Osteoporosis, reduce the symptoms of Anemia. Improve Cardiovascular health and protect the Digestive system. Eggplant is also good for weight loss, managing Diabetes, reducing Stress, protective infants from birth defects and preventing Cancer.

Now that you know all these great benefits, let me walk you through how I make this simple, healthy and delicious Eggplant stew that my Children love.

Eggplant stew ingredient

Ingredient:

1 Can  Chopped Tomato (400 g)

1 Medium size Onion (about 1 cup)

1 Can Tuna fish (195 g)

2  Eggplants (1½ Cup)

2 Tablespoons Garlic,Ginger mix

2 Anchovies (Optional)

1 Bay leaf

1 teaspoon your favorite mix spice

Salt/pepper to taste

½ teaspoon your favorite spice

2 Tablespoons Sunflower oil / Olive oil

Procedure:

Start by washing Eggplant and drying with kitchen towel. Bake in a preheated Oven at 180°c/356°f, for about 40 minutes. Let it cool completely to prevent burning your hands, cut each eggplant in half and using a spoon, scoop out the flesh on a chopping board and chop it up until it resemble purée but not quite fine.

Now in a medium size Pot, heat up oil and add garlic and ginger mix. Stir for a minute, add chopped onion and anchovies if you choose to and stir until onions get translucent.

Add tomato, bay leaf, salt/pepper and your favorite spice. Give everything a good stir and a taste to adjust the seasoning if needed. Cover the stew and let it simmer for 10 minutes.

After the 10 minutes, add tuna fish , let cook for another 10 minutes then add the chopped eggplant. Since eggplants have been baked, there is no need to cook it any further . Turn the heat off, cover the stew and let it sit for 5 minutes.

Serve this delicious stew with some rice, pasta, mash potato, bread or simply sprinkle some homemade croutons on the stew and enjoy.
