Chicken noodle soup
Nothing taste better during the colder months than a hot bowl of soup and this chicken noodle soup ,falls right under that category.
This chicken noodle soup looks and taste great and with the Festive Season just around the corner,this soup as a starter, prior to your main dinner will impress anyone. To start, you will need;
Ingredients;
Chicken stock (6 cups)
Carrot (1 cup) (about 160 g)
Leeks (½ cup) (80 g)
Chicken breasts (1 cup) (140 g)
Cooked Soup Noodles (about 1 cup)
chives
Salt / Pepper to taste
Procedure ;
Wash all vegetables and cut then into desired sizes,I recommend fairly big sizes the vegetables don’t get mushy.
Dice the cooked chicken breast, as desired. Cook soup noodles until it is al dente ( meaning firm to the bite), strain it and ran cold water on it to stop it from cooking further then set aside.
Now in a medium pot, bring chicken stock to a boil and add the carrots to it. Note; The secret to a delicious chicken noodle soup or any kind of chicken soups,is having a great chicken stock. If you haven’t already, check out my Home made chicken stock here.
Let the carrots cook for 3 minutes, then add leeks, chicken and cooked noodles. Season with salt and pepper and bring to a boil. Now cover the soup and take it from the heat, let it sit for 5 minutes for the steam to finish the cooking and this step ensures maximum flavor .
Serve soup while it’s still hot with some chopped chives.
