My easy yet delicious chickpeas Salad
Personally I have never been a big fan of legumes,but my husband and daughter love them. For this reason I have had to put my own little twist to some classic legume recipes like this easy chickpeas salad,that both myself and my family enjoys.
chickpeas is a legume, like all the other legumes very high in Protein, fibre,Magnesium Etc. They can be found in soups,cold salads,stews and in the world known humus, which is an Arabic word for chickpeas paste mixed with tahini that almost every body loves.
You can cook chickpeas yourself by bringing it to a rapid boil for 10 minutes,then let simmer for 1–2 hours. Below I share with you one of my husbands favorite Chickpeas salad recipe,using can chickpeas. It is very easy to put together and am sure your family will enjoy it. Preparation time: 15 minutes
INGREDIENTS:
1 Can chickpeas (240gram),rinsed and drained
1 Cup can corn,rinsed and drained
1 Red bell pepper (1 cup)
½ cucumber (1 cup)
1 Medium size avocado
½ Cup cherry tomatoes
½ Red onion
6 Tablespoons extra–virgin olive oil
1 lemon (2 tablespoons) juice
Salt and freshly ground black pepper to taste
Coriander/Parsley ( a hand full) one you prefer
PROCEDURE:
1.Wash all your vegetables. Peel cucumber and using a spoon,remove the seeds and chop into fine cubes
2.chop cherry tomatoes, avocado red onion and Coriander/Parsley.
3.In a big bowl, mix chickpeas, can corn,avocado,cucumber,onion,Red bell pepper,cherry tomatoes.
4.Put extra–virgin olive oil and lemon juice in a small container with a tight lid and shake till well combined.
5.Salt and pepper the salad mix,add the vinaigrette and coriander/parsley then toss well to combine the flavors and serve.
Serving Ideas:
This Salad can be served as a side dish with roasted fish, fried/baked chicken, rice or can be eaten just by itself.
