Best Homemade Fried Rice
Fried Rice is one of those foods that no matter how satisfy I am , I just can’t turn down. A mix of few vegetables, boiled rice and some eggs, this easy to make meal, will impress anyone.
For those festive days ahead, you can never go wrong adding this fried rice recipe to your dinner list. To start you will need;
Ingredients:
Rice (3 Cups)
Large Eggs (3)
Carrot (½ Cup)
Green Beans (½ Cup)
Green Chickpeas (½ Cup)
Spring Onions (½ Cup)
Sunflower Oil (3 Tablespoons)
Salt/Pepper
Procedure :
For best results, use a day old rice that has been refrigerated. If for some reason you can’t cook your rice a day ahead, cook it at least an hour before. spread cooked rice on a big tray and let air dry.
Wash carrots, green beans and spring onions, dry with a kitchen towel and cut into small sizes. Because I used frozen peas, I just ran some hot water on it to thaw out. If you decide to use fresh peas, make sure you cook them a few minutes first.
Crack eggs into a bowl, add salt and pepper and whisk till it gets foamy then set aside.
Using a wok, one of my favorite cooking utensil when it comes to making fried rice. The wok pan has many advantages over your normal frying pan. It distributes heat more evenly and ensures that when you toss during stir–frying, your food lands right back into the pan and not others places like on your stove and floor. So long story short, if you are a stir–fry lover like I am and don’t own a wok pan, then you definitely need one in your life. Although there are some really expensive wok pans out there, here is a cheaper alternative on Amazon, if you are interested.
Heat up the wok pan and add 1 Tbsp oil, then the eggs. Stair for about 2 minutes while it cooks to break them up. Set aside and using a kitchen towel, wipe the inside of your wok to get it clean. Pour the remaining 2 Tbsp oil in and throw in the carrots and green beans, sauté for 3 minutes, add salt and pepper the add chick peas and spring onions. Sauté for another 2 minutes, add rice, eggs and toss using 2 wooden spoons to mix everything properly. If you prefer, you can add some soya sauce at this stage, but I like the clean colorful look of it without soya sauce so I didn’t use any in this recipe.
One of the best things about fried rice is that, it stores really well, meaning you can make it a few days ahead and just heat up the day you want to serve it.
