The Perfect Summer Cucumber salad.
On a hot summer day, nothing taste better than this fresh tasting cucumber salad. It takes little to no time at all to prepare and taste very refreshing .
I love cucumber and I can put them on almost anything. My favorite ones are the mini cucumbers, I think they have more flavor.
here are the things you will need:
Cucumber ( 400 g )
Cherry Tomato ( 300 g)
Red Onion (1 medium size )
Lemon (1 medium size) (2 Tablespoons)
Extra virgin Olive Oil ( 4 Tablespoons) (2 oz) ( 60 ml)
Wash all ingredient properly. Peel and slice cucumber into thin slices, cut each cherry tomato in half, slice onions into thin rings and chop the coriander.
Note: If you are using the normal big cucumber, one will be enough. Plus you will have to take an extra step and cut the cucumber in half after peeling. Using a spoon, scoop out some of the seed/flesh. Since cucumber has lots of water and produces even more when salted, this step will prevent the salad from being watery. I skipped this step because I was using the mini ones.
Now, in a big bowl, combine all the chopped ingredient and the add salt and pepper to taste.
For the vinaigrette, Mix the lemon juice, extra virgin olive oil, salt/pepper and 1 teaspoon honey ( totally optional). Give it a good stir, or try putting all in a gas jar with a lid and give it a good shake like I shown below. Sprinkle on the salad and toss a few times.
The cucumber salad is now ready to be enjoyed and you barely spent any time preparing it. Serve this salad with Rice, grilled Fish, baked or fried Chicken, put on taco etc.
